Vodka Pasta

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant.
  3. Add red pepper flakes and cook for an additional minute.
  4. Add vodka and simmer for 2-3 minutes until reduced by half.
  5. Add crushed tomatoes, salt, and black pepper. Bring to a simmer and cook for 10 minutes.
  6. Stir in heavy cream and simmer for an additional 5 minutes.
  7. Add cooked pasta to the skillet and toss to coat in the sauce.
  8. Sprinkle grated Parmesan cheese over the pasta and stir to combine.
  9. Serve with chopped fresh parsley on top, if desired.
