Vodka Pasta
Ingredients:
- 1 pound pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/2 cup vodka
- 1 (28-ounce) can crushed tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (optional)
Instructions:
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant.
- Add red pepper flakes and cook for an additional minute.
- Add vodka and simmer for 2-3 minutes until reduced by half.
- Add crushed tomatoes, salt, and black pepper. Bring to a simmer and cook for 10 minutes.
- Stir in heavy cream and simmer for an additional 5 minutes.
- Add cooked pasta to the skillet and toss to coat in the sauce.
- Sprinkle grated Parmesan cheese over the pasta and stir to combine.
- Serve with chopped fresh parsley on top, if desired.
