Vichy Carrots
Ingredients:
- 1 pound carrots
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 1/4 cup chicken or vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions:
- Peel and slice the carrots into 1/4 inch rounds.
- In a large skillet, melt the butter over medium heat.
- Add the brown sugar and stir until dissolved.
- Add the carrots and toss to coat in the butter and sugar mixture.
- Pour in the chicken or vegetable broth and bring to a simmer.
- Cover and let cook for 10-12 minutes, or until carrots are tender.
- Season with salt and pepper to taste and stir in fresh parsley, if desired.
- Serve hot as a side dish.
