Vichy Carrots

Instructions:

  1. Peel and slice the carrots into 1/4 inch rounds.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the brown sugar and stir until dissolved.
  4. Add the carrots and toss to coat in the butter and sugar mixture.
  5. Pour in the chicken or vegetable broth and bring to a simmer.
  6. Cover and let cook for 10-12 minutes, or until carrots are tender.
  7. Season with salt and pepper to taste and stir in fresh parsley, if desired.
  8. Serve hot as a side dish.
