Veggie Burger
Ingredients:
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1 cup breadcrumbs
- 1/2 cup shredded carrots
- 1/2 cup diced red onion
- 1/4 cup chopped fresh parsley
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup flour
- 4 burger buns
- Sliced avocado, tomato, and lettuce for toppings (optional)
Instructions:
- In a large mixing bowl, mash the black beans until they form a paste-like consistency.
- Add in the cooked quinoa, breadcrumbs, carrots, red onion, parsley, garlic powder, onion powder, smoked paprika, salt, and black pepper to the bowl with the black beans. Mix until well combined.
- Divide the mixture into four equal portions and shape them into patties.
- In a separate shallow dish, place the flour. Coat each patty in the flour, shaking off any excess.
- Heat a large skillet over medium heat and add a thin layer of oil. Once hot, add the patties and cook for about 5-6 minutes on each side, or until golden brown and heated through.
- Toast the burger buns in a toaster or on the same skillet for a few minutes until lightly crispy.
- Assemble the burgers by placing a patty on each bun and adding some avocado slices, tomato, and lettuce if desired.
