Vegetarian Paella
Ingredients:
- 1 cup uncooked white rice
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 zucchini, diced
- 1 cup frozen peas
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon saffron threads
- Salt and pepper to taste
- 1/4 cup chopped parsley
- Lemon wedges for serving
Instructions:
- In a large skillet or paella pan, heat olive oil over medium heat.
- Add onion and garlic, cooking until softened, about 2 minutes.
- Add bell peppers, zucchini, and frozen peas. Cook until vegetables are slightly softened, about 5 minutes.
- Add rice to the pan and stir to coat in the oil and vegetables.
- Add diced tomatoes, vegetable broth, smoked paprika, oregano, saffron, salt and pepper to the pan. Stir to combine.
- Bring mixture to a boil then reduce heat to low. Cover and let simmer for about 20 minutes, or until rice is cooked and liquid is absorbed.
- Sprinkle parsley over the top and serve with lemon wedges.
