Vegetarian Paella

  1. In a large skillet or paella pan, heat olive oil over medium heat.
  2. Add onion and garlic, cooking until softened, about 2 minutes.
  3. Add bell peppers, zucchini, and frozen peas. Cook until vegetables are slightly softened, about 5 minutes.
  4. Add rice to the pan and stir to coat in the oil and vegetables.
  5. Add diced tomatoes, vegetable broth, smoked paprika, oregano, saffron, salt and pepper to the pan. Stir to combine.
  6. Bring mixture to a boil then reduce heat to low. Cover and let simmer for about 20 minutes, or until rice is cooked and liquid is absorbed.
  7. Sprinkle parsley over the top and serve with lemon wedges.
