Vegetable Stir Fry

  1. In a large skillet or wok, heat the vegetable oil over high heat.
  2. Add the onion and garlic and cook for 2-3 minutes, until softened.
  3. Add the bell peppers and mixed vegetables and cook for 5-6 minutes, until slightly softened.
  4. In a small bowl, mix together the soy sauce, sesame oil, red pepper flakes, salt, and black pepper.
  5. Pour the sauce into the skillet with the vegetables and stir to coat.
  6. Cook for an additional 2-3 minutes, until the vegetables are fully cooked and coated in the sauce.
  7. Serve the vegetable stir fry over cooked rice and enjoy!
