Vegetable Stir Fry
Ingredients:
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cups mixed vegetables (such as broccoli, carrots, and mushrooms)
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked rice
Instructions:
- In a large skillet or wok, heat the vegetable oil over high heat.
- Add the onion and garlic and cook for 2-3 minutes, until softened.
- Add the bell peppers and mixed vegetables and cook for 5-6 minutes, until slightly softened.
- In a small bowl, mix together the soy sauce, sesame oil, red pepper flakes, salt, and black pepper.
- Pour the sauce into the skillet with the vegetables and stir to coat.
- Cook for an additional 2-3 minutes, until the vegetables are fully cooked and coated in the sauce.
- Serve the vegetable stir fry over cooked rice and enjoy!
