Vegetable Soup

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onions and garlic, sauté for 2-3 minutes until they start to soften.
  3. Add chopped mixed vegetables and continue to sauté for another 5 minutes.
  4. Pour in the can of diced tomatoes and stir well.
  5. Add vegetable broth and dried thyme.
  6. Bring the soup to a boil, then reduce heat and let it simmer for 15-20 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy your delicious vegetable soup!
