Vegetable Soup
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 cups of chopped mixed vegetables (carrots, celery, mushrooms, bell peppers, etc)
- 1 can of diced tomatoes
- 6 cups of vegetable broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- In a large pot, heat olive oil over medium heat.
- Add chopped onions and garlic, sauté for 2-3 minutes until they start to soften.
- Add chopped mixed vegetables and continue to sauté for another 5 minutes.
- Pour in the can of diced tomatoes and stir well.
- Add vegetable broth and dried thyme.
- Bring the soup to a boil, then reduce heat and let it simmer for 15-20 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy your delicious vegetable soup!
