Vegetable Quiche
Ingredients:
- 1 pie crust
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup sliced mushrooms
- 1/2 cup chopped spinach
- 1/2 cup shredded cheddar cheese
- 4 eggs
- 1 cup milk
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375 degrees F (190 degrees C).
- Unroll the pie crust and press into a 9-inch pie dish. Trim the edges and prick the bottom with a fork.
- In a skillet, cook the onions, bell pepper, and mushrooms until softened.
- Add the chopped spinach and cook until wilted.
- Spoon the mixture into the pie crust.
- Sprinkle the shredded cheddar cheese on top.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture over the vegetables and cheese in the pie crust.
- Bake for 35-40 minutes, until the filling is set and the crust is golden brown.
