Vegan Tacos

  1. In a large bowl, mix together the black beans, quinoa, bell pepper, onion, avocado, tomato, cilantro, lime juice, cumin, chili powder, salt and pepper. Set aside.
  2. Heat a large skillet over medium heat and add the olive oil.
  3. Add the corn tortillas, one at a time, and cook for about 30 seconds on each side until soft and pliable.
  4. Fill each tortilla with the bean and quinoa mixture and fold in half.
  5. Place the tacos back in the skillet and cook for another 1-2 minutes on each side until crispy.
  6. Remove from heat and serve warm.
