Vegan Tacos
    Ingredients:
    
        - 1 cup cooked black beans
 
        - 1 cup cooked quinoa
 
        - 1 bell pepper, diced
 
        - 1 onion, diced
 
        - 1 avocado, diced
 
        - 1 tomato, diced
 
        - 1/4 cup chopped cilantro
 
        - 1 lime, juiced
 
        - 1 tsp cumin
 
        - 1 tsp chili powder
 
        - Salt and pepper to taste
 
        - 8-10 corn tortillas
 
        - 1 tbsp olive oil
 
    
    Instructions:
    
        - In a large bowl, mix together the black beans, quinoa, bell pepper, onion, avocado, tomato, cilantro, lime juice, cumin, chili powder, salt and pepper. Set aside.
 
        - Heat a large skillet over medium heat and add the olive oil.
 
        - Add the corn tortillas, one at a time, and cook for about 30 seconds on each side until soft and pliable.
 
        - Fill each tortilla with the bean and quinoa mixture and fold in half.
 
        - Place the tacos back in the skillet and cook for another 1-2 minutes on each side until crispy.
 
        - Remove from heat and serve warm.
