Vegan Chili

  1. In a large pot, heat olive oil over medium-high heat.
  2. Add diced onion, bell pepper, and minced garlic. Cook until softened, about 5 minutes.
  3. Add chili powder, cumin, and salt and pepper to the pot. Stir until fragrant.
  4. Add drained and rinsed black beans, kidney beans, and diced tomatoes to the pot. Stir to combine.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and let the chili simmer for 20 minutes, stirring occasionally.
  7. Serve hot and enjoy your delicious vegan chili!
