Vegan Chili
Ingredients:
- 1 can of black beans, drained and rinsed
- 1 can of kidney beans, drained and rinsed
- 1 can of diced tomatoes
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves of garlic, minced
- 1 cup of vegetable broth
- 2 tablespoons of olive oil
- 1 tablespoon of chili powder
- 1 teaspoon of cumin
- Salt and pepper to taste
Instructions:
- In a large pot, heat olive oil over medium-high heat.
- Add diced onion, bell pepper, and minced garlic. Cook until softened, about 5 minutes.
- Add chili powder, cumin, and salt and pepper to the pot. Stir until fragrant.
- Add drained and rinsed black beans, kidney beans, and diced tomatoes to the pot. Stir to combine.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and let the chili simmer for 20 minutes, stirring occasionally.
- Serve hot and enjoy your delicious vegan chili!
