Vanilla Pudding

  1. In a medium saucepan, combine the milk, sugar, cornstarch and salt.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and boils.
  3. Remove from heat and stir in the vanilla extract and butter until well combined.
  4. Pour the pudding into serving dishes and let cool for 5 minutes.
  5. Cover with plastic wrap, making sure the wrap touches the surface of the pudding to prevent a skin from forming.
  6. Refrigerate for at least 2 hours or until set.
  7. Serve with whipped cream or fresh fruit on top, if desired.
