Utah Scones

  1. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  2. Add the cold butter and use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Make a well in the center of the mixture and pour in the buttermilk. Mix until a soft dough forms.
  4. On a floured surface, roll out the dough to about 1/2 inch thickness. Use a cookie cutter or knife to cut the dough into desired shapes.
  5. In a large frying pan, heat about 1 inch of oil over medium heat. Once the oil is hot, carefully add a few pieces of the dough at a time (do not overcrowd the pan).
  6. Cook for about 2 minutes on each side, until golden brown. Use tongs to flip the scones and remove them from the pan once they are cooked.
  7. Place the cooked scones on a paper towel-lined plate to absorb any excess oil.
  8. Sprinkle powdered sugar over the scones while they are still warm.
