Utah Scones
Ingredients:
- 3 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1 cup buttermilk
- Oil for frying
- Powdered sugar for dusting
Instructions:
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- Add the cold butter and use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Make a well in the center of the mixture and pour in the buttermilk. Mix until a soft dough forms.
- On a floured surface, roll out the dough to about 1/2 inch thickness. Use a cookie cutter or knife to cut the dough into desired shapes.
- In a large frying pan, heat about 1 inch of oil over medium heat. Once the oil is hot, carefully add a few pieces of the dough at a time (do not overcrowd the pan).
- Cook for about 2 minutes on each side, until golden brown. Use tongs to flip the scones and remove them from the pan once they are cooked.
- Place the cooked scones on a paper towel-lined plate to absorb any excess oil.
- Sprinkle powdered sugar over the scones while they are still warm.
