Upside-Down Cake

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch round cake pan.
  2. Drain pineapple slices and reserve juice.
  3. In a small bowl, mix together melted butter and brown sugar.
  4. Spread mixture evenly into prepared cake pan.
  5. If desired, sprinkle chopped nuts on top of brown sugar mixture.
  6. Arrange pineapple slices on top of brown sugar mixture.
  7. In a medium bowl, sift together flour, baking powder, baking soda, and salt.
  8. In a separate large bowl, beat together softened butter and white sugar until light and fluffy.
  9. Add in eggs one at a time, mixing well after each addition.
  10. Stir in vanilla extract.
  11. Gently mix in dry ingredients, alternating with reserved pineapple juice and milk.
