Upside-Down Cake
Ingredients:
- 1 (20 ounce) can pineapple slices in juice
- 1/3 cup butter, melted
- 1/2 cup brown sugar
- 1/2 cup chopped pecans or walnuts (optional)
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup white sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch round cake pan.
- Drain pineapple slices and reserve juice.
- In a small bowl, mix together melted butter and brown sugar.
- Spread mixture evenly into prepared cake pan.
- If desired, sprinkle chopped nuts on top of brown sugar mixture.
- Arrange pineapple slices on top of brown sugar mixture.
- In a medium bowl, sift together flour, baking powder, baking soda, and salt.
- In a separate large bowl, beat together softened butter and white sugar until light and fluffy.
- Add in eggs one at a time, mixing well after each addition.
- Stir in vanilla extract.
- Gently mix in dry ingredients, alternating with reserved pineapple juice and milk.
