Upside-Down Banana Bread

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9x5 inch loaf pan.
  3. Peel and mash bananas in a large mixing bowl.
  4. Add melted butter and mix well.
  5. Stir in baking soda and salt.
  6. Add sugar, beaten egg, and vanilla extract, and mix until well combined.
  7. Gradually add flour, stirring until just moistened.
  8. If desired, fold in chopped walnuts.
  9. Spread mixture evenly into prepared loaf pan.
  10. Bake in preheated oven for 50-60 minutes, until a toothpick inserted into the center of the bread comes out clean.
  11. Let cool in pan for 10 minutes, then flip onto a serving platter while still warm.
