Unagi Sushi

  1. Cook the sushi rice according to package instructions.
  2. Once cooked, add the seasoned rice vinegar to the rice and mix well. Let it cool to room temperature.
  3. Place the nori sheet on a bamboo sushi mat with the shiny side facing down.
  4. Spread a thin layer of rice on top of the nori, leaving about an inch gap at the top.
  5. Add the sliced unagi fillet, avocado, and cucumber in a line in the center of the rice.
  6. Using the sushi mat, roll the nori tightly, pressing down gently to ensure the ingredients are held together.
  7. Dip your finger in water and wet the top edge of the nori to seal the roll.
  8. Using a sharp knife, slice the sushi roll into 6-8 pieces.
  9. Serve with wasabi and soy sauce on the side.
