Umeboshi Plums with Rice

Ingredients:

Instructions:

  1. In a medium pot, rinse the rice under cold water until the water runs clear.
  2. Drain the rice and add it to the pot with 2 cups of water and 1/4 teaspoon of salt.
  3. Cover the pot and bring to a boil over high heat. Reduce the heat to low and simmer for 18 minutes.
  4. While the rice is cooking, pit and chop the umeboshi plums.
  5. After 18 minutes, remove the pot from the heat and let it sit for 10 minutes.
  6. Fluff the rice with a fork and add the chopped umeboshi plums on top.
  7. Cover the pot and let it sit for an additional 10 minutes.
  8. After 10 minutes, drizzle with soy sauce and mix well. Serve hot.
