Umeboshi Plums with Rice
Ingredients:
- 1 cup Japanese short-grain rice
- 2 cups water
- 1/4 teaspoon salt
- 6 umeboshi plums
- 1 tablespoon soy sauce
Instructions:
- In a medium pot, rinse the rice under cold water until the water runs clear.
- Drain the rice and add it to the pot with 2 cups of water and 1/4 teaspoon of salt.
- Cover the pot and bring to a boil over high heat. Reduce the heat to low and simmer for 18 minutes.
- While the rice is cooking, pit and chop the umeboshi plums.
- After 18 minutes, remove the pot from the heat and let it sit for 10 minutes.
- Fluff the rice with a fork and add the chopped umeboshi plums on top.
- Cover the pot and let it sit for an additional 10 minutes.
- After 10 minutes, drizzle with soy sauce and mix well. Serve hot.
