Ultimate Spaghetti Carbonara
Ingredients:
- 1 pound spaghetti
- 6 slices bacon, chopped
- 4 cloves garlic, minced
- 4 large eggs
- 1 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions:
- In a large pot of boiling salted water, cook spaghetti according to package instructions until al dente. Reserve 1 cup of the cooking water, then drain the spaghetti and set aside.
- In a separate pan, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pan.
- Add minced garlic to the pan with the bacon fat and cook until fragrant.
- In a separate bowl, whisk together the eggs, Parmesan cheese, parsley, salt, and pepper.
- Slowly pour the egg mixture into the pan with the bacon and garlic, stirring constantly to create a creamy sauce. If the sauce is too thick, add some of the reserved pasta water to thin it out.
- Add the cooked spaghetti to the pan and stir until it is fully coated in the sauce.
- Top with crispy bacon and additional Parmesan cheese, if desired.
