Ultimate Spaghetti Carbonara

  1. In a large pot of boiling salted water, cook spaghetti according to package instructions until al dente. Reserve 1 cup of the cooking water, then drain the spaghetti and set aside.
  2. In a separate pan, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pan.
  3. Add minced garlic to the pan with the bacon fat and cook until fragrant.
  4. In a separate bowl, whisk together the eggs, Parmesan cheese, parsley, salt, and pepper.
  5. Slowly pour the egg mixture into the pan with the bacon and garlic, stirring constantly to create a creamy sauce. If the sauce is too thick, add some of the reserved pasta water to thin it out.
  6. Add the cooked spaghetti to the pan and stir until it is fully coated in the sauce.
  7. Top with crispy bacon and additional Parmesan cheese, if desired.
