Ukrainian Perogies
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup sour cream
- 1/2 cup vegetable oil
- 1/2 cup warm water
- 1 teaspoon salt
- 1 egg
- 3 medium potatoes, peeled and diced
- 1/2 onion, diced
- 1/4 cup butter
- Salt and pepper to taste
Instructions:
- In a large mixing bowl, combine flour, sour cream, vegetable oil, warm water, salt, and egg until a smooth dough forms.
- Knead the dough for about 5 minutes until it is soft and elastic. Cover the dough with a clean cloth and let it rest for 30 minutes.
- In a separate pot, boil the diced potatoes until they are tender. Drain the potatoes and mash them with a fork or potato masher.
- In a small skillet, sauté the diced onion with butter until it becomes translucent. Add the onion to the mashed potatoes and mix well. Season with salt and pepper to taste.
- On a floured surface, roll out the dough to about 1/8 inch thickness. Use a 3-inch round cookie cutter to cut out circles of dough.
- Place a spoonful of the potato mixture in the center of each dough circle. Fold the dough over the filling and pinch the edges to seal. Alternatively, you can use a perogie press to seal the edges.
- In a large pot of boiling water, add the perogies and cook for about 3-4 minutes until they float to the surface. Drain the perogies and set them aside.
