Ukrainian Perogies

  1. In a large mixing bowl, combine flour, sour cream, vegetable oil, warm water, salt, and egg until a smooth dough forms.
  2. Knead the dough for about 5 minutes until it is soft and elastic. Cover the dough with a clean cloth and let it rest for 30 minutes.
  3. In a separate pot, boil the diced potatoes until they are tender. Drain the potatoes and mash them with a fork or potato masher.
  4. In a small skillet, sauté the diced onion with butter until it becomes translucent. Add the onion to the mashed potatoes and mix well. Season with salt and pepper to taste.
  5. On a floured surface, roll out the dough to about 1/8 inch thickness. Use a 3-inch round cookie cutter to cut out circles of dough.
  6. Place a spoonful of the potato mixture in the center of each dough circle. Fold the dough over the filling and pinch the edges to seal. Alternatively, you can use a perogie press to seal the edges.
  7. In a large pot of boiling water, add the perogies and cook for about 3-4 minutes until they float to the surface. Drain the perogies and set them aside.
