Udon with Vegetables
Ingredients:
- 1 package of udon noodles
- 1 tablespoon sesame oil
- 1 onion, sliced
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of sliced mushrooms
- 1 cup of julienned carrots
- 1 cup of snow peas
- 1 cup of vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- Salt and pepper to taste
Instructions:
- Cook the udon noodles according to package instructions. Drain and set aside.
- In a large skillet, heat sesame oil over medium heat. Add sliced onions and minced garlic, cooking until they become fragrant.
- Add sliced bell pepper, broccoli florets, mushrooms, and julienned carrots to the skillet. Cook for about 5 minutes, until vegetables start to soften.
- In a small bowl, mix together vegetable broth, soy sauce, and cornstarch. Add this mixture to the skillet with the vegetables.
- Stir in snow peas and cook for an additional 2-3 minutes, until the sauce has thickened and the vegetables are fully cooked.
- Add cooked udon noodles to the skillet and toss to combine with the vegetables and sauce.
- Season with salt and pepper to taste.
- Serve hot and enjoy your delicious udon with vegetables!
