Udon with Vegetables

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat sesame oil over medium heat. Add sliced onions and minced garlic, cooking until they become fragrant.
  3. Add sliced bell pepper, broccoli florets, mushrooms, and julienned carrots to the skillet. Cook for about 5 minutes, until vegetables start to soften.
  4. In a small bowl, mix together vegetable broth, soy sauce, and cornstarch. Add this mixture to the skillet with the vegetables.
  5. Stir in snow peas and cook for an additional 2-3 minutes, until the sauce has thickened and the vegetables are fully cooked.
  6. Add cooked udon noodles to the skillet and toss to combine with the vegetables and sauce.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy your delicious udon with vegetables!
