Udon Stir Fry
Ingredients:
- 1 package of udon noodles
- 1 tablespoon sesame oil
- 1 red bell pepper, thinly sliced
- 1 carrot, sliced into strips
- 1 cup sliced mushrooms
- 1 cup broccoli florets
- 2 cloves of garlic, minced
- 1/4 cup soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon ginger, minced
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- 1 tablespoon vegetable oil
- Scallions, chopped for garnish
Instructions:
- Cook udon noodles according to package instructions, drain, and set aside.
- In a small bowl, mix sesame oil, soy sauce, honey, rice vinegar, ginger, and red pepper flakes (if using) to make the stir fry sauce.
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add garlic, bell pepper, carrot, mushrooms, and broccoli. Stir fry for 2-3 minutes until vegetables are slightly softened.
- Add cooked udon noodles and stir fry sauce to the skillet. Toss together until everything is well coated in the sauce.
- Cook for an additional 2-3 minutes until noodles are heated through.
- Season with salt and pepper to taste.
- Garnish with chopped scallions before serving.
