Udon Stir Fry

  1. Cook udon noodles according to package instructions, drain, and set aside.
  2. In a small bowl, mix sesame oil, soy sauce, honey, rice vinegar, ginger, and red pepper flakes (if using) to make the stir fry sauce.
  3. In a large skillet or wok, heat vegetable oil over medium-high heat.
  4. Add garlic, bell pepper, carrot, mushrooms, and broccoli. Stir fry for 2-3 minutes until vegetables are slightly softened.
  5. Add cooked udon noodles and stir fry sauce to the skillet. Toss together until everything is well coated in the sauce.
  6. Cook for an additional 2-3 minutes until noodles are heated through.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped scallions before serving.
