Udon Noodle Soup
Ingredients:
- 8 oz udon noodles
- 6 cups chicken or vegetable broth
- 1 tsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp minced ginger
- 1 clove minced garlic
- 1 cup sliced shiitake mushrooms
- 1 cup sliced bok choy
- 1 cup sliced green onions
- Salt and pepper, to taste
Instructions:
- In a pot, bring the broth, sesame oil, soy sauce, rice vinegar, minced ginger, and garlic to a boil.
- Add the shiitake mushrooms and bok choy to the pot and cook for 3-5 minutes, until slightly softened.
- Add the udon noodles to the pot and cook according to package instructions.
- Once the noodles are cooked, add the green onions and season with salt and pepper, to taste.
- Serve hot and enjoy your homemade udon noodle soup!
