  1. In a pot, bring the broth, sesame oil, soy sauce, rice vinegar, minced ginger, and garlic to a boil.
  2. Add the shiitake mushrooms and bok choy to the pot and cook for 3-5 minutes, until slightly softened.
  3. Add the udon noodles to the pot and cook according to package instructions.
  4. Once the noodles are cooked, add the green onions and season with salt and pepper, to taste.
  5. Serve hot and enjoy your homemade udon noodle soup!
