Ube Pancakes
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1 cup milk
- 1/4 cup vegetable oil
- 1/2 cup ube (purple yam) jam
- 1/4 cup water
- 1/4 cup butter, melted
- Maple syrup, for serving
- Butter, for serving
Instructions:
- In a large bowl, mix together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat the egg and then mix in the milk, vegetable oil, and ube jam until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- In a small saucepan, heat the ube jam and water over medium heat until the jam has melted and the mixture is smooth.
- In a separate pan or griddle, melt a small amount of butter over medium heat.
- Using a 1/4 cup measuring cup, pour the batter onto the pan and cook until bubbles form on the surface.
- Flip the pancake and cook until golden brown.
- Repeat with the remaining batter.
- Serve the pancakes hot, topped with the melted ube jam, butter, and maple syrup.
