Ube Pancakes

  1. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the egg and then mix in the milk, vegetable oil, and ube jam until well combined.
  3. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. In a small saucepan, heat the ube jam and water over medium heat until the jam has melted and the mixture is smooth.
  5. In a separate pan or griddle, melt a small amount of butter over medium heat.
  6. Using a 1/4 cup measuring cup, pour the batter onto the pan and cook until bubbles form on the surface.
  7. Flip the pancake and cook until golden brown.
  8. Repeat with the remaining batter.
  9. Serve the pancakes hot, topped with the melted ube jam, butter, and maple syrup.
