Ube Mochi
Ingredients:
- 1 cup glutinous rice flour
- 1/2 cup ube (purple yam) powder
- 1/2 cup sugar
- 1/2 cup coconut milk
- 1/4 cup water
- 1 tsp vanilla extract
- 1/4 cup shredded coconut, for coating
Instructions:
- Preheat your oven to 350°F/ 180°C.
- In a mixing bowl, combine the glutinous rice flour, ube powder, and sugar.
- In a separate bowl, mix the coconut milk, water, and vanilla extract.
- Slowly pour the wet mixture into the dry ingredients, and mix until a dough forms.
- Using your hands or a spoon, form small balls with the dough and place them on a parchment-lined baking sheet. Leave some space in between each mochi.
- Bake the mochi for 10-12 minutes, or until they become slightly golden on the outside.
- Remove from the oven and let cool for a few minutes.
- In a small pan, toast the shredded coconut until slightly browned.
- Roll each mochi ball in the toasted coconut until coated.
