Ube Mochi

  1. Preheat your oven to 350°F/ 180°C.
  2. In a mixing bowl, combine the glutinous rice flour, ube powder, and sugar.
  3. In a separate bowl, mix the coconut milk, water, and vanilla extract.
  4. Slowly pour the wet mixture into the dry ingredients, and mix until a dough forms.
  5. Using your hands or a spoon, form small balls with the dough and place them on a parchment-lined baking sheet. Leave some space in between each mochi.
  6. Bake the mochi for 10-12 minutes, or until they become slightly golden on the outside.
  7. Remove from the oven and let cool for a few minutes.
  8. In a small pan, toast the shredded coconut until slightly browned.
  9. Roll each mochi ball in the toasted coconut until coated.
  10. Serve and enjoy your delicious Ube Mochi!
