Ube Ice Cream
Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/2 cup ube powder
- 1/4 teaspoon salt
- 3 egg yolks
Instructions:
- In a small saucepan, combine heavy cream, whole milk, sugar, vanilla extract, ube powder, and salt. Cook over medium heat, stirring occasionally, until sugar and ube powder are fully dissolved.
- In a separate bowl, whisk together the egg yolks. Slowly pour the hot cream mixture into the egg yolks, while continuously whisking.
- Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until slightly thickened. Do not let it come to a boil.
- Remove from heat and let cool to room temperature.
- Cover and refrigerate the mixture for at least 4 hours or overnight.
- Churn the cooled mixture in an ice cream maker according to the manufacturer's instructions.
- Transfer the churned ice cream into a container and freeze for at least 2 hours before serving.
