Ube Ice Cream

  1. In a small saucepan, combine heavy cream, whole milk, sugar, vanilla extract, ube powder, and salt. Cook over medium heat, stirring occasionally, until sugar and ube powder are fully dissolved.
  2. In a separate bowl, whisk together the egg yolks. Slowly pour the hot cream mixture into the egg yolks, while continuously whisking.
  3. Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until slightly thickened. Do not let it come to a boil.
  4. Remove from heat and let cool to room temperature.
  5. Cover and refrigerate the mixture for at least 4 hours or overnight.
  6. Churn the cooled mixture in an ice cream maker according to the manufacturer's instructions.
  7. Transfer the churned ice cream into a container and freeze for at least 2 hours before serving.
  8. Serve and enjoy your delicious homemade ube ice cream!
