Ube Halaya
Ingredients:
- 1 pound grated purple yam (ube)
- 1 (14 oz) can sweetened condensed milk
- 1 (13.5 oz) can coconut milk
- 1/2 cup white sugar
- 1/4 cup butter
- 1 teaspoon vanilla extract
- Optional toppings: coconut flakes, chopped nuts, or condensed milk
Instructions:
- In a large pan, combine grated ube, sweetened condensed milk, coconut milk, and sugar.
- Cook over medium heat, stirring constantly, until the mixture thickens and starts to pull away from the pan. This may take 20-30 minutes.
- Remove from heat and stir in butter and vanilla extract until well combined.
- Transfer the mixture to a greased 8x8 inch baking dish and smooth the top with a spatula.
- Allow to cool for at least 1 hour in the fridge or 30 minutes in the freezer before serving.
- Garnish with desired toppings and serve cold.
