Ube Halaya

  1. In a large pan, combine grated ube, sweetened condensed milk, coconut milk, and sugar.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and starts to pull away from the pan. This may take 20-30 minutes.
  3. Remove from heat and stir in butter and vanilla extract until well combined.
  4. Transfer the mixture to a greased 8x8 inch baking dish and smooth the top with a spatula.
  5. Allow to cool for at least 1 hour in the fridge or 30 minutes in the freezer before serving.
  6. Garnish with desired toppings and serve cold.
