Ube Doughnuts

  1. In a mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  2. In a separate bowl, mash the ube until it is smooth. Add in the milk, egg, melted butter, and vanilla extract. Mix until well combined.
  3. Add the dry ingredients into the wet ingredients and stir until a dough forms.
  4. On a floured surface, roll out the dough to about 1/2 inch thickness.
  5. Using a donut cutter or two circular cookie cutters (one larger and one smaller), cut out the doughnuts and holes.
  6. In a deep pot or fryer, heat vegetable oil to 350°F (175°C).
  7. Carefully place the doughnuts into the hot oil and fry until golden brown, about 2-3 minutes per side.
  8. Remove the doughnuts from the oil and let them drain on a paper towel-lined plate.
  9. If desired, dust the doughnuts with powdered sugar while they are still warm.
  10. Serve and enjoy your delicious ube doughnuts!
