Ube Doughnuts
Ingredients:
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup mashed ube (purple yam)
- 1/4 cup milk
- 1 egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
- Vegetable oil, for frying
- 1/2 cup powdered sugar (optional)
Instructions:
- In a mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
- In a separate bowl, mash the ube until it is smooth. Add in the milk, egg, melted butter, and vanilla extract. Mix until well combined.
- Add the dry ingredients into the wet ingredients and stir until a dough forms.
- On a floured surface, roll out the dough to about 1/2 inch thickness.
- Using a donut cutter or two circular cookie cutters (one larger and one smaller), cut out the doughnuts and holes.
- In a deep pot or fryer, heat vegetable oil to 350°F (175°C).
- Carefully place the doughnuts into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove the doughnuts from the oil and let them drain on a paper towel-lined plate.
- If desired, dust the doughnuts with powdered sugar while they are still warm.
- Serve and enjoy your delicious ube doughnuts!
