Ube Cake
Ingredients:
- 2 cups grated ube
- 2 cups cake flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/4 cup vegetable oil
- Purple food coloring (optional)
- Cooking spray
- Ube halaya (for filling and topping)
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan with cooking spray.
- In a large bowl, combine 2 cups of grated ube, 2 cups of cake flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Mix well.
- In a separate bowl, cream together 1/2 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy.
- Beat in 3 large eggs, one at a time, followed by 1/2 cup of milk and 1 teaspoon of vanilla extract.
- Add the dry ingredients to the wet mixture and mix until well combined. If desired, add a few drops of purple food coloring to achieve a vibrant purple color.
- Slowly pour in 1/4 cup of vegetable oil while mixing, to ensure a moist and tender cake.
- Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
