Truffles

Instructions:

  1. In a microwave-safe bowl, combine the chopped chocolate, heavy cream, and butter.
  2. Microwave for 30 seconds, then stir. Continue microwaving in 30-second increments, stirring in between, until the chocolate and butter are fully melted and combined with the cream.
  3. Stir in the vanilla extract.
  4. Cover the bowl and refrigerate for at least 2 hours, or until the mixture is firm enough to scoop.
  5. Using a small cookie scoop or spoon, scoop out the chilled chocolate mixture and roll into balls about 1 inch in diameter.
  6. Roll the truffles in cocoa powder or toppings of your choice. Place on a wax paper-lined tray or plate.
  7. Refrigerate the truffles for another 30 minutes to set.
  8. Enjoy your homemade truffles or store them in an airtight container in the fridge for up to 2 weeks.
