Tomato Pie
Ingredients:
- 1 pie crust
- 3 large tomatoes, sliced
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- 1 tbsp olive oil
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- Roll out the pie crust and place it in a 9-inch pie dish. Prick the bottom with a fork and bake for 10 minutes. Remove from the oven and let cool.
- Arrange the tomato slices over the crust in a single layer.
- In a small bowl, mix together the mozzarella cheese and Parmesan cheese.
- Sprinkle the cheese mixture over the tomatoes.
- In another small bowl, mix together the chopped basil, olive oil, minced garlic, salt and pepper.
- Drizzle the basil and olive oil mixture over the cheese and tomatoes.
- Bake the pie for 25-30 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
- Let the pie cool for a few minutes before serving.
