Tomato Pie

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a 9-inch pie dish. Prick the bottom with a fork and bake for 10 minutes. Remove from the oven and let cool.
  3. Arrange the tomato slices over the crust in a single layer.
  4. In a small bowl, mix together the mozzarella cheese and Parmesan cheese.
  5. Sprinkle the cheese mixture over the tomatoes.
  6. In another small bowl, mix together the chopped basil, olive oil, minced garlic, salt and pepper.
  7. Drizzle the basil and olive oil mixture over the cheese and tomatoes.
  8. Bake the pie for 25-30 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  9. Let the pie cool for a few minutes before serving.
