Tomato Basil Soup
Ingredients:
- 4 large ripe tomatoes, peeled and chopped
- 1 onion, chopped
- 1 clove garlic, minced
- 2 cups chicken broth
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup heavy cream
- Salt and pepper to taste
Instructions:
- In a large pot, sauté the onion and garlic over medium heat until softened.
- Add the tomatoes and chicken broth to the pot and bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- Using an immersion blender or regular blender, blend the soup until smooth.
- Return the soup to the pot and stir in the chopped basil leaves.
- Simmer for an additional 10 minutes.
- Stir in the heavy cream and let heat through.
- Season with salt and pepper if desired.
- Serve hot and enjoy your delicious Tomato Basil Soup!
