Tiramisu
Ingredients:
- 6 egg yolks
- 3/4 cup sugar
- 1/3 cup Marsala wine
- 1.5 cups heavy cream
- 1 pound mascarpone cheese
- 1 cup brewed espresso
- 40 ladyfingers
- 4 tablespoons unsweetened cocoa powder
Instructions:
- In a medium saucepan, whisk together egg yolks and sugar until well combined.
- Place the saucepan over medium heat and stir in the Marsala wine.
- Cook for about 5 minutes, stirring constantly, until the mixture thickens and coats the back of a spoon.
- Remove from heat and let cool.
- In a separate bowl, beat the heavy cream until stiff peaks form.
- Add in the mascarpone cheese and beat until well combined and smooth.
- Fold in the cooled egg yolk mixture.
- Dip the ladyfingers in the brewed espresso, making sure to not soak them for too long.
- Place a layer of ladyfingers in the bottom of a 9x13 inch dish.
- Spread half of the cream mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and remaining cream mixture.
- Cover and refrigerate for at least 4 hours, or overnight.
- Sift cocoa powder over the top before serving.
