Tiramisu

  1. In a medium saucepan, whisk together egg yolks and sugar until well combined.
  2. Place the saucepan over medium heat and stir in the Marsala wine.
  3. Cook for about 5 minutes, stirring constantly, until the mixture thickens and coats the back of a spoon.
  4. Remove from heat and let cool.
  5. In a separate bowl, beat the heavy cream until stiff peaks form.
  6. Add in the mascarpone cheese and beat until well combined and smooth.
  7. Fold in the cooled egg yolk mixture.
  8. Dip the ladyfingers in the brewed espresso, making sure to not soak them for too long.
  9. Place a layer of ladyfingers in the bottom of a 9x13 inch dish.
  10. Spread half of the cream mixture over the ladyfingers.
  11. Repeat with another layer of dipped ladyfingers and remaining cream mixture.
  12. Cover and refrigerate for at least 4 hours, or overnight.
  13. Sift cocoa powder over the top before serving.
