Thai Noodles

  1. In a large pot, bring water to a boil and cook the rice noodles according to package instructions. Drain and set aside.
  2. In a separate pan, heat the oil over medium-high heat. Add the garlic and cook until fragrant.
  3. Add the chicken and cook until browned on all sides.
  4. Add the bell pepper, onion, and carrot and cook for 2-3 minutes, until vegetables are slightly soft.
  5. In a small bowl, mix together the soy sauce, fish sauce, brown sugar, rice vinegar, and chicken broth. Pour this mixture over the chicken and vegetables.
  6. Bring the mixture to a simmer and let cook for 5 minutes, stirring occasionally.
  7. Add the cooked rice noodles to the pan and toss to coat them in the sauce.
  8. Garnish with chopped cilantro and green onions.
