Thai Noodles
Ingredients:
- 1 pack of rice noodles
- 1 pound of chicken breast, diced
- 1 tablespoon oil
- 2 cloves of garlic, minced
- 1 red bell pepper, thinly sliced
- 1 onion, thinly sliced
- 1 carrot, julienned
- 1/4 cup soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1/2 cup chicken broth
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
- 1 lime, cut into wedges
- Crushed peanuts for topping (optional)
Instructions:
- In a large pot, bring water to a boil and cook the rice noodles according to package instructions. Drain and set aside.
- In a separate pan, heat the oil over medium-high heat. Add the garlic and cook until fragrant.
- Add the chicken and cook until browned on all sides.
- Add the bell pepper, onion, and carrot and cook for 2-3 minutes, until vegetables are slightly soft.
- In a small bowl, mix together the soy sauce, fish sauce, brown sugar, rice vinegar, and chicken broth. Pour this mixture over the chicken and vegetables.
- Bring the mixture to a simmer and let cook for 5 minutes, stirring occasionally.
- Add the cooked rice noodles to the pan and toss to coat them in the sauce.
- Garnish with chopped cilantro and green onions.
