Thai Fried Rice
Ingredients:
- 3 cups cooked rice
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup frozen peas and carrots, thawed
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1/2 teaspoon pepper
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions:
- In a wok or large skillet, heat the vegetable oil over medium-high heat.
- Add the chopped onion and minced garlic, and stir-fry for 2-3 minutes until fragrant.
- Add the chopped red bell pepper, peas and carrots, and continue to stir-fry for another 2-3 minutes.
- Push the vegetables to one side of the wok and add the beaten eggs. Scramble the eggs until they are cooked through, then mix them in with the vegetables.
- Add the cooked rice to the wok and mix with the vegetables and eggs. Cook for 2-3 minutes, stirring occasionally.
- In a small bowl, mix together the soy sauce, oyster sauce, sugar, and pepper. Pour the sauce over the rice and vegetable mixture in the wok, and stir to combine.
- Cook for an additional 2-3 minutes, until the rice is heated through and the sauce is well incorporated.
- Remove the wok from heat and stir
