Thai Fried Rice

  1. In a wok or large skillet, heat the vegetable oil over medium-high heat.
  2. Add the chopped onion and minced garlic, and stir-fry for 2-3 minutes until fragrant.
  3. Add the chopped red bell pepper, peas and carrots, and continue to stir-fry for another 2-3 minutes.
  4. Push the vegetables to one side of the wok and add the beaten eggs. Scramble the eggs until they are cooked through, then mix them in with the vegetables.
  5. Add the cooked rice to the wok and mix with the vegetables and eggs. Cook for 2-3 minutes, stirring occasionally.
  6. In a small bowl, mix together the soy sauce, oyster sauce, sugar, and pepper. Pour the sauce over the rice and vegetable mixture in the wok, and stir to combine.
  7. Cook for an additional 2-3 minutes, until the rice is heated through and the sauce is well incorporated.
