Thai Coconut Soup (Tom Kha Gai)
Ingredients:
- 2 cups chicken broth
- 1 cup coconut milk
- 1 stalk lemongrass, sliced
- 1 inch ginger, grated
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red chili, diced
- 1 tomato, diced
- 1 cup sliced mushrooms
- 1 cup sliced chicken or tofu
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 teaspoon brown sugar
- 1/4 cup fresh cilantro, chopped
- Salt and pepper, to taste
Instructions:
- In a large pot, combine chicken broth, coconut milk, lemongrass, ginger, onion, garlic, red chili, and tomato. Bring to a boil over medium-high heat.
- Add mushrooms and chicken/tofu. Cook for 5-7 minutes, until chicken is cooked through and tofu is heated.
- Stir in fish sauce, lime juice, and brown sugar.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
