Tart

  1. In a mixing bowl, combine the flour and butter. Use your fingers to rub the flour and butter together until the mixture resembles breadcrumbs.
  2. Add in the cold water, a little at a time, and mix until a dough forms.
  3. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  4. Preheat oven to 375°F (190°C).
  5. Roll out the dough on a floured surface to about 1/8 inch thickness.
  6. Transfer the dough to a 9-inch tart pan and press the dough into the bottom and up the sides.
  7. In a small bowl, mix together the beaten egg and 1 tablespoon of water. Brush a thin layer of the egg wash onto the bottom of the tart crust.
  8. In a separate bowl, mix together the fresh fruit, sugar, and cornstarch until well combined.
  9. Pour the fruit mixture into the tart crust and spread it out evenly.
  10. Bake the tart for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
  11. Allow the tart to cool for at least 10 minutes before serving.
