Tabouleh

  1. In a large bowl, soak the bulgur wheat in 1 1/2 cups of water for 30 minutes.
  2. After 30 minutes, drain any excess water and fluff the bulgur with a fork.
  3. In a small bowl, mix together olive oil, lemon juice, chopped mint, chopped parsley, salt, and pepper.
  4. Pour the dressing over the bulgur and mix well.
  5. Add in the diced tomatoes, cucumber, and red onion.
  6. Season with salt and pepper to taste.
  7. Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
  8. Serve chilled and enjoy your delicious tabouleh!
