Tabouleh
Ingredients:
- 1 cup bulgur wheat
- 1 1/2 cups water
- 1/4 teaspoon salt
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
- 2 tomatoes, diced
- 1 cucumber, diced
- 1/4 cup diced red onion
- Salt and pepper to taste
Instructions:
- In a large bowl, soak the bulgur wheat in 1 1/2 cups of water for 30 minutes.
- After 30 minutes, drain any excess water and fluff the bulgur with a fork.
- In a small bowl, mix together olive oil, lemon juice, chopped mint, chopped parsley, salt, and pepper.
- Pour the dressing over the bulgur and mix well.
- Add in the diced tomatoes, cucumber, and red onion.
- Season with salt and pepper to taste.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
- Serve chilled and enjoy your delicious tabouleh!
