Szechuan Chicken
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon chili paste
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 1/4 cup cold water
- 1 tablespoon vegetable oil
- 1 red bell pepper, diced
- 1/2 cup roasted peanuts
- Cooked white rice for serving
Instructions:
- In a small bowl, mix together soy sauce, rice vinegar, chili paste, sesame oil, cornstarch, and water. Set aside.
- Heat vegetable oil in a large skillet or wok over high heat. Add chicken and cook until browned, about 5 minutes. Remove chicken from pan and set aside.
- In the same pan, add vegetable oil, garlic, and ginger. Cook for 1 minute, until fragrant.
- Add diced bell pepper and cook for an additional 2 minutes.
- Return chicken to the pan and pour in the sauce mixture. Cook for 2-3 minutes, until sauce thickens and coats the chicken.
- Add roasted peanuts and stir to combine. Cook for an additional minute.
- Serve hot over white rice.
