Szechuan Chicken

  1. In a small bowl, mix together soy sauce, rice vinegar, chili paste, sesame oil, cornstarch, and water. Set aside.
  2. Heat vegetable oil in a large skillet or wok over high heat. Add chicken and cook until browned, about 5 minutes. Remove chicken from pan and set aside.
  3. In the same pan, add vegetable oil, garlic, and ginger. Cook for 1 minute, until fragrant.
  4. Add diced bell pepper and cook for an additional 2 minutes.
  5. Return chicken to the pan and pour in the sauce mixture. Cook for 2-3 minutes, until sauce thickens and coats the chicken.
  6. Add roasted peanuts and stir to combine. Cook for an additional minute.
  7. Serve hot over white rice.
