Sweet and Sour Chicken
Ingredients:
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil
- 1 green bell pepper, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 onion, cut into chunks
- 1 can pineapple chunks, drained
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- Cooked rice for serving
Instructions:
- In a large bowl, mix together the flour, cornstarch, salt, and black pepper. Add the chicken pieces and toss to coat.
- Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the coated chicken pieces and cook until golden brown, flipping occasionally, about 5-6 minutes.
- Remove the chicken from the skillet and set aside. In the same skillet, add the green bell pepper, red bell pepper, and onion. Cook until slightly softened, about 3-4 minutes.
- Add the pineapple chunks to the skillet and cook for another 2 minutes.
- In a small bowl, whisk together the ketchup, rice vinegar, brown sugar, soy sauce, garlic powder, and ginger powder.
