Swamp Cabbage

  1. Remove the outer leaves of the swamp cabbage and cut into 1-inch slices.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add onion, garlic, and red bell pepper to the skillet and cook until softened.
  4. Add the sliced swamp cabbage and chicken or vegetable broth to the skillet.
  5. Cover and let simmer for 15-20 minutes, stirring occasionally, until the cabbage is tender.
