Swamp Cabbage
Ingredients:
- 2 pounds fresh swamp cabbage
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup chicken or vegetable broth
- Salt and pepper to taste
Instructions:
- Remove the outer leaves of the swamp cabbage and cut into 1-inch slices.
- Heat olive oil in a large skillet over medium heat.
- Add onion, garlic, and red bell pepper to the skillet and cook until softened.
- Add the sliced swamp cabbage and chicken or vegetable broth to the skillet.
- Cover and let simmer for 15-20 minutes, stirring occasionally, until the cabbage is tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy your delicious swamp cabbage!
