Sushi

  1. In a saucepan, combine 2 cups of sushi rice with 2 1/2 cups of water and bring to a boil. Reduce heat to low, cover, and let simmer for 20 minutes.
  2. In a small bowl, mix 4 tablespoons of rice vinegar, 4 tablespoons of sugar, and 2 tablespoons of salt. Heat in the microwave for 30 seconds, stirring until sugar and salt are dissolved.
  3. Transfer cooked rice to a large wooden or glass bowl and drizzle with the vinegar mixture. Use a wooden spoon to gently mix and coat the rice with the vinegar.
  4. Let the rice sit for 10 minutes to cool.
  5. Prepare a sushi mat by wrapping it in plastic wrap. This will prevent the rice from sticking to the mat.
  6. Place a sheet of nori on the mat, shiny side down.
  7. Spoon a thin layer of rice onto the nori, leaving about 1 inch of space at the top and bottom of the sheet.
  8. Place your desired fillings in a line across the center of the rice.
  9. Using the mat, roll the nori and rice over the filling tightly, pressing down on the mat as you go. Moisten the top edge of the nori with water to seal the roll.
