Stuffed Peppers
Ingredients:
- 4 Bell Peppers (any color)
- 1 lb. Ground Beef or Turkey
- 1 cup Cooked Rice
- 1 can Diced Tomatoes
- 1 small Onion, diced
- 2 cloves Garlic, minced
- 1 tsp Italian Seasoning
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1 cup Shredded Cheese (any variety)
- 1/4 cup Water
Instructions:
- Preheat your oven to 375 degrees F.
- Cut the tops off of the peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.
- In a pan over medium heat, cook the ground beef/turkey until browned. Drain any excess fat.
- Add in the diced onions and minced garlic and cook until softened.
- Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and black pepper. Cook for another 2-3 minutes.
- Spoon the mixture into the prepared peppers. Make sure to pack it in tightly.
- Pour 1/4 cup of water into the bottom of the baking dish and cover with foil.
- Bake in the preheated oven for 35 minutes.
- Remove the foil and top each pepper with shredded cheese.
- Bake for an additional 10 minutes until the cheese is melted and bubbly.
