Strawberry Shortcake

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add the cold butter cubes and use a pastry cutter or your fingers to mix until it resembles coarse crumbs.
  4. Slowly pour in the heavy cream, stirring until the dough just comes together.
  5. Transfer the dough to a lightly floured surface and knead it gently 3-4 times.
  6. Roll out the dough into a 9-inch circle and place it onto a parchment-lined baking sheet.
  7. Bake for 18-20 minutes, or until the top is light golden brown.
  8. In a medium-sized bowl, mix the sliced strawberries with the remaining 1/4 cup of sugar.
  9. Let the sugar dissolve with the strawberries for about 10 minutes.
  10. Remove the shortcake from the oven and let it cool for 10 minutes.
  11. Cut the shortcake in half horizontally and place the bottom half on a serving plate.
  12. Spoon half of the strawberry mixture over the shortcake, spreading it out evenly.
  13. Place the top half of the shortcake on top of the strawberries.
  14. Spoon the remaining strawberry mixture over the top of the shortcake.
  15. Serve with whipped cream and enjoy!
