Strawberry Shortcake
Ingredients:
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter, cut into small cubes
- 1 cup heavy cream
- 2 cups fresh strawberries, sliced
- 1/4 cup sugar
- Whipped cream, for serving
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine flour, sugar, baking powder, and salt.
- Add the cold butter cubes and use a pastry cutter or your fingers to mix until it resembles coarse crumbs.
- Slowly pour in the heavy cream, stirring until the dough just comes together.
- Transfer the dough to a lightly floured surface and knead it gently 3-4 times.
- Roll out the dough into a 9-inch circle and place it onto a parchment-lined baking sheet.
- Bake for 18-20 minutes, or until the top is light golden brown.
- In a medium-sized bowl, mix the sliced strawberries with the remaining 1/4 cup of sugar.
- Let the sugar dissolve with the strawberries for about 10 minutes.
- Remove the shortcake from the oven and let it cool for 10 minutes.
- Cut the shortcake in half horizontally and place the bottom half on a serving plate.
- Spoon half of the strawberry mixture over the shortcake, spreading it out evenly.
- Place the top half of the shortcake on top of the strawberries.
- Spoon the remaining strawberry mixture over the top of the shortcake.
- Serve with whipped cream and enjoy!
