Strawberry Jam
Ingredients:
- 2 pounds fresh strawberries
- 4 cups granulated sugar
- 1 packet of pectin
- 1/4 cup lemon juice
- 1 teaspoon butter
Instructions:
- Wash and hull the strawberries, removing the stems and leaves. Cut them into small pieces and place in a large pot.
- Add the sugar to the strawberries and mix well.
- In a separate bowl, mix the pectin with 1/4 cup of the sugar mixture.
- Stir the pectin mixture into the pot of strawberries and sugar.
- Place the pot on the stove and turn the heat to medium-high. Stir the mixture constantly until it comes to a boil.
- Add the lemon juice and continue to stir until the jam thickens, about 10 minutes. To test if the jam is ready, place a small amount on a chilled plate and tilt it. If the jam runs slowly, it is ready. If not, continue to cook for a few more minutes.
- Remove the pot from the heat and skim off any foam on the surface.
- Stir in the butter to prevent foam from forming.
- Using a funnel, pour the hot jam into clean and sterilized jars, leaving about 1/4 inch of space at the top.
- Wipe the rims of the jars with a clean cloth, then seal with lids and rings.
- Process the jars in a water bath for 10 minutes to ensure that they are properly sealed.
- Let the jars cool and check the seals. Once cooled, any jars that did not seal properly should be stored in the refrigerator and eaten within a few weeks. The
