Strawberry Jam

  1. Wash and hull the strawberries, removing the stems and leaves. Cut them into small pieces and place in a large pot.
  2. Add the sugar to the strawberries and mix well.
  3. In a separate bowl, mix the pectin with 1/4 cup of the sugar mixture.
  4. Stir the pectin mixture into the pot of strawberries and sugar.
  5. Place the pot on the stove and turn the heat to medium-high. Stir the mixture constantly until it comes to a boil.
  6. Add the lemon juice and continue to stir until the jam thickens, about 10 minutes. To test if the jam is ready, place a small amount on a chilled plate and tilt it. If the jam runs slowly, it is ready. If not, continue to cook for a few more minutes.
  7. Remove the pot from the heat and skim off any foam on the surface.
  8. Stir in the butter to prevent foam from forming.
  9. Using a funnel, pour the hot jam into clean and sterilized jars, leaving about 1/4 inch of space at the top.
  10. Wipe the rims of the jars with a clean cloth, then seal with lids and rings.
  11. Process the jars in a water bath for 10 minutes to ensure that they are properly sealed.
  12. Let the jars cool and check the seals. Once cooled, any jars that did not seal properly should be stored in the refrigerator and eaten within a few weeks. The
