Stone Crab Claws

  1. In a large pot, bring 4 cups of water to a boil.
  2. Once the water has come to a boil, add a generous amount of salt and stir to dissolve.
  3. Gently add the stone crab claws to the boiling water and reduce the heat to a simmer.
  4. Let the claws simmer for 8-10 minutes, until they turn a bright red color.
  5. Remove the claws from the pot with tongs and place them in a bowl of ice water to stop the cooking process.
  6. Once the claws have cooled, use a crab cracker or a rolling pin to crack the shells and remove the meat from the claws.
  7. Serve the crab claws with lemon wedges and melted butter for dipping.
