Instructions:

  1. Season beef cubes with salt and pepper.
  2. In a large pot, heat olive oil over medium-high heat.
  3. Add beef cubes and cook until browned on all sides, about 5 minutes.
  4. Remove beef from pot and set aside.
  5. Add onion and garlic to the pot and cook until softened, about 3 minutes.
  6. Add carrots and potatoes and cook for an additional 5 minutes.
  7. Return beef to the pot and pour in beef broth, tomato paste, Worcestershire sauce, and bay leaf.
  8. Stir everything together and bring to a boil.
  9. Reduce heat to low, cover the pot, and let simmer for 1-2 hours, stirring occasionally.
  10. Remove bay leaf before serving.
