Soup Recipe

  1. In a large pot, cook the meat over medium-high heat until it is browned. Remove the meat from the pot and set aside.
  2. In the same pot, sauté the diced onion and minced garlic until they become fragrant and translucent.
  3. Add the diced carrots, chopped celery, and potatoes to the pot and continue cooking for another 5 minutes.
  4. Pour in the carton of broth and the can of diced tomatoes. Add the browned meat back into the pot.
  5. Add the dried thyme, bay leaf, and salt and pepper to taste. Stir everything together well.
  6. Bring the soup to a simmer and let it cook for about 20 minutes, or until the vegetables are tender.
  7. Remove the bay leaf and taste the soup. Add more seasonings if needed.
  8. Serve hot and garnish with fresh parsley if desired.
