Soup Recipe
Ingredients:
- 1 pound of your choice of meat (chicken, beef, or pork)
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 carton (32 ounces) of chicken or beef broth
- 1 can (14.5 ounces) of diced tomatoes
- 1 cup of chopped potatoes
- 1 teaspoon of dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- In a large pot, cook the meat over medium-high heat until it is browned. Remove the meat from the pot and set aside.
- In the same pot, sauté the diced onion and minced garlic until they become fragrant and translucent.
- Add the diced carrots, chopped celery, and potatoes to the pot and continue cooking for another 5 minutes.
- Pour in the carton of broth and the can of diced tomatoes. Add the browned meat back into the pot.
- Add the dried thyme, bay leaf, and salt and pepper to taste. Stir everything together well.
- Bring the soup to a simmer and let it cook for about 20 minutes, or until the vegetables are tender.
- Remove the bay leaf and taste the soup. Add more seasonings if needed.
- Serve hot and garnish with fresh parsley if desired.
