Souffle

  1. Preheat the oven to 400 degrees F.
  2. Butter the inside of a 1 1/2-quart soufflé dish and sprinkle evenly with grated Parmesan cheese.
  3. Melt the butter in a small saucepan over low heat.
  4. Add the flour and cook, stirring constantly, for 2 minutes.
  5. Pour the hot milk into the butter and flour mixture and whisk until it comes to a boil.
  6. Remove from the heat.
  7. Add the salt, pepper, nutmeg, and egg yolks and whisk until well combined.
  8. Stir in the Gruyere cheese.
  9. In a separate bowl, whisk the egg whites and cream of tartar until they form stiff peaks.
  10. Gently fold the egg whites into the cheese mixture until well combined.
