Souffle
Ingredients:
- 3 tablespoons unsalted butter, plus extra for greasing the dish
- 3 tablespoons all-purpose flour
- 1 cup hot whole milk
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- Pinch nutmeg
- 4 extra-large egg yolks, at room temperature
- 1/2 cup grated Gruyere cheese, plus extra for sprinkling
- 1/4 cup freshly grated Parmesan cheese
- 5 extra-large egg whites, at room temperature
- 1/8 teaspoon cream of tartar
Instructions:
- Preheat the oven to 400 degrees F.
- Butter the inside of a 1 1/2-quart soufflé dish and sprinkle evenly with grated Parmesan cheese.
- Melt the butter in a small saucepan over low heat.
- Add the flour and cook, stirring constantly, for 2 minutes.
- Pour the hot milk into the butter and flour mixture and whisk until it comes to a boil.
- Remove from the heat.
- Add the salt, pepper, nutmeg, and egg yolks and whisk until well combined.
- Stir in the Gruyere cheese.
- In a separate bowl, whisk the egg whites and cream of tartar until they form stiff peaks.
- Gently fold the egg whites into the cheese mixture until well combined.
- Pour the mixture into the prepared soufflé dish and sprinkle with extra
