Scones

  1. In a large mixing bowl, combine flour, sugar, baking powder, and salt. Mix well.
  2. Add cold butter cubes to the dry ingredients and use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
  3. In a separate bowl, beat together milk, egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. If using dried cranberries or white chocolate chips, fold them into the dough at this point.
  5. Place the dough onto a floured surface and knead gently a few times until a smooth dough forms.
  6. Using a floured rolling pin, roll out the dough to about 1 inch thickness.
  7. Using a floured cookie cutter or glass, cut out scone shapes and place them onto a baking sheet lined with parchment paper.
  8. Bake in a preheated oven at 375°F for 15-20 minutes, until the scones are lightly golden on top.
  9. Let the scones cool for a few minutes before serving.
