Scones
Ingredients:
- 2 cups all-purpose flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup dried cranberries (optional)
- 1/2 cup white chocolate chips (optional)
Instructions:
- In a large mixing bowl, combine flour, sugar, baking powder, and salt. Mix well.
- Add cold butter cubes to the dry ingredients and use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
- In a separate bowl, beat together milk, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined. If using dried cranberries or white chocolate chips, fold them into the dough at this point.
- Place the dough onto a floured surface and knead gently a few times until a smooth dough forms.
- Using a floured rolling pin, roll out the dough to about 1 inch thickness.
- Using a floured cookie cutter or glass, cut out scone shapes and place them onto a baking sheet lined with parchment paper.
- Bake in a preheated oven at 375°F for 15-20 minutes, until the scones are lightly golden on top.
- Let the scones cool for a few minutes before serving.
