Scallops

  1. Rinse scallops and pat dry with paper towels.
  2. In a large skillet, melt butter over medium heat.
  3. Add garlic and cook for 1 minute.
  4. Season scallops with salt and pepper and place in skillet.
  5. Cook for 3-4 minutes on each side, until golden brown and slightly opaque in the center.
  6. Squeeze lemon juice over the scallops and sprinkle with chopped parsley.
