Saltimbocca
Ingredients:
- 4 thin slices of veal
- 4 slices of prosciutto
- 4 fresh sage leaves
- 1/4 cup flour
- 4 tablespoons unsalted butter
- 1/4 cup dry white wine
- Salt and pepper, to taste
Instructions:
- Place a slice of prosciutto and a sage leaf on each slice of veal. Secure with a toothpick.
- Heat a large skillet over medium heat and add 2 tablespoons of butter. While the butter is melting, lightly coat the saltimbocca in flour.
- Cook the saltimbocca in the skillet until lightly browned on both sides, about 2-3 minutes per side. Remove from skillet and set aside.
- Add the remaining butter to the skillet and allow it to melt. Stir in the white wine and let it simmer for 1-2 minutes.
- Return the saltimbocca to the skillet and spoon the sauce over them. Cook for an additional 1-2 minutes, or until fully cooked.
- Remove from heat, remove the toothpicks, and serve hot. Season with salt and pepper, to taste.
