Russian Salad

  1. Start by boiling the potatoes and carrots in a pot of salted water until they are fork tender.
  2. Remove them from the pot and let them cool before peeling and dicing them into small cubes.
  3. In a separate pot, boil the green peas for about 5 minutes and then drain them.
  4. In a large bowl, combine the diced potatoes, carrots, peas, canned corn, pickles, and ham or chicken.
  5. In a small bowl, mix together the mayonnaise, sour cream, Dijon mustard, salt, and pepper.
  6. Pour the dressing over the salad and gently mix until all the ingredients are coated.
  7. Refrigerate the salad for at least 30 minutes to allow the flavors to blend together.
  8. Serve the Russian salad cold as a side dish or as a light meal on its own.
