Russian Salad
Ingredients:
- 4 medium potatoes
- 4 medium carrots
- 1 cup green peas (fresh or frozen)
- 1 cup canned corn
- 1 cup diced pickles
- 1 cup diced ham or chicken
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions:
- Start by boiling the potatoes and carrots in a pot of salted water until they are fork tender.
- Remove them from the pot and let them cool before peeling and dicing them into small cubes.
- In a separate pot, boil the green peas for about 5 minutes and then drain them.
- In a large bowl, combine the diced potatoes, carrots, peas, canned corn, pickles, and ham or chicken.
- In a small bowl, mix together the mayonnaise, sour cream, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad and gently mix until all the ingredients are coated.
- Refrigerate the salad for at least 30 minutes to allow the flavors to blend together.
- Serve the Russian salad cold as a side dish or as a light meal on its own.
